NORMA SAUCE – USES AND CONSUMPTION:

Norma sauce par excellence reflects the Sicilian culinary tradition and above all that of the city of Catania.

To create this simple product, but with a pleasant taste and intense Mediterranean aroma of its ingredients, you need: freshly picked aubergines, fresh and ripe tomatoes, oil and basil, all purely Mediterranean foods linked to the summer season.

Norma saucea is prepared by frying sliced aubergines with fresh tomato sauce, after cooking, with a few cloves of garlic and fresh basil leaves. It can be eaten spread on a slice of bread with a generous sprinkling of exclusively sheep’s salted ricotta. It is also an excellent topping for pizzas and  added as a condiment to pasta, giving it a sublime flavour.

Tradition has it that the playwright Nino Martoglio gave its name to pasta alla Norma, who equaled pasta alla “Norma” in terms of goodness and delicacy with the wonderful and famous work of the same name by Bellini, precisely, “La Norma”.
