Grapes: Nerello Mascalese 95%, Nerello Cappuccio 5%
Harvest: First ten days of October (starting from 5 October, feast of San Placido)
Unit yield: 6,000 kg per hectare
Vinification: fermentation in steel. Short-lasting pumping over to extract the best from the skins. Aging of 9-12 months. In the bottle for 6 months
Alcohol content: 14.0% vol.
