Trapanese pesto is a typical pesto from Western Sicily. As the word itself says, “Trapanese” is a pesto whose birth took place in Trapani, a city that overlooks the archipelago of the Egadi Islands and which resides in the westernmost tip of the island.
With its intense flavour, Trapani-style pesto is ideal as a condiment for first courses. Their main ally are the busiate, a typical Sicilian pasta shape, traditionally made with the use of busio, the stem of a grass typical of the place called desia. This coral-red colored pesto has tomato and almonds as its main ingredients which, when crushed, manage to release an unmistakable flavor. Its taste recalls the tradition of western Sicilian cuisine, closer to an Arab style with spicy and intense flavours.
